We are what we eat. So nutrition consultant Udo Erasmus believes it naturally follows that we can change our state - from sickness to health, for example - by changing what we eat.
Erasmus calls it "designer health," and insists his theories on diet will be the wave of the future.
He doesn't advocate any kind of radical regimen. Rather, he tells his audiences to take charge of their own well-being through the "building blocks" of good health: food, water and air.Through those elements, humans get all the ingredients necessary to stave off physical degeneration, Erasmus believes, up to and including curing cancer.

reasonable exercise and, above all, dietary balance. He believes a crucial component of balance is understanding and controlling the role of fats and oils in the body. It's a topic he has written on extensively in two books and scores of articles.
The Polish-born West Coast health educator and author, who once worked under David Suzuki, has degrees in zoology, counseling psychology and nutrition. After a life-threatening incident about 10 years ago, in which he was poisoned through careless application of pesticides, Erasmus turned his attention to nutrition.
Convinced he faced cancer because the poison he ingested was dioxin-bearing 2, 4-D, he could get no help from conventional medicine. "Nutrition was my only option." He first became interested in vitamin C as a molecule that helped detoxify his body, then vitamin E to prevent aging and tissue damage.
. "It took about a year to get my energy back," he says. After a decade of practicing his designer health program, he says he not only has no ill effects from the poisoning but, at 50, feels "better than I did at 25."
