Udo's Choice™ Food Pyramid illustrates healthy food choices forming the base or bottom of the pyramid.

As you proceed higher on the pyramid, you encounter foods that present more of an obstacle to digestion and metabolism.

  1st Level - Greens & Non-Starchy Vegetables

Greens are the most important foods because they provide us with all of the components of health.

They are food as well as medicine. Green vegetables should be consumed in a ratio of nine-to-one to fruits. Minerals, enzymes, fibre and phytonutrients are only a few of the important essentials supplied by Greens and Non-Starchy Vegetables.

  2nd Level - Good Fats & Proteins

Good fats should comprise between 15% and 50% of daily calories. Good Fats are made with health in mind, pressed from organically-grown seeds, free of toxins and processing damage, with the right ratio of omega-3 to omega-6.

Proteins - essential amino acids - should comprise 12% to 30% of calories. Examples are cheese, turkey, yogurt, etc. Certain seeds, nuts and fatty fish contain both good fats and protein.

3rd Level - Fuel Foods: Carbs, Fruit & Processed Fats

Fuel consists of foods that are turned into energy. Carbs not burned become fat. Hence the saying, "burn them or wear them." Excess carbs are the source of most overweight, obesity and type-2 diabetes affecting 65% of our populations.

White sugar is worse than white flour is worse than complex carbs. In many ways, undamaged fats are better fuel than carbs.

The only problem with fruit is sugar, which can increase triglycerides (blood fats) if you don't burn them, thereby increasing body fat. As the saying goes, "An apple a day keeps the doctor away, the 2nd brings him back!"

4th Level - White Foods & Burned Foods: Damaged and Toxic!

Worst by far are the disease-causing toxic WHITE FOODS and BURNT FOODS. WHITE FOODS include white breads, white rice, white sugar and clear (processed) cooking oils.

BURNT FOODS are foods that change in appearance and chemical nature due to the application of excessive heat. Examples are charbroiled meats, deep-fried foods, foods browned in ovens or on grilles. Reduce or avoid completely!
