"About 20 years ago, Government health authorities pronounced that carbohydrates should be the staple of Americans' diets," says Dr. Erasmus. "Carbohydrates, which are readily converted into fat, were placed at the base of the food pyramid as the most important food.

"The Government taught that "optimum nutrition" consists of consuming less fat and more cereals, breads, & grains. Since that time, thepercent of overweight in the US population has climbed from 25% to 65%."

Science has clearly shown that carbohydrates trigger our bodies to turn off "fat-burning genes" -- and turn on "the fat-making gene".

"Fifty years ago we became a nation of carbohydrate eaters and addicts. Had the Government put protein or fat at the base of the food pyramid, today we would be looking at overweight levels of only 10%," says Dr. Erasmus.
